This Homemade French Onion Dip is the perfect blend of a sweet and creamy picnic snack. Served with veggies or salty chips, you won’t feel guilty about this low-fat Greek Yoghurt version. Your guests might though, because they’re going to scarf it down!
Homemade French Onion Dip
Makes 3 Cups
INGREDIENTS
- 3 T unsalted butter
- 2 small Vidalia Onions (sliced thin)
- 2 shallots (sliced thin)
- 2 1/2 C low fat Greek Yoghurt
- 1/2 C mayonnaise
- S & P
DIRECTIONS
- Melt the butter in a skillet and add the sliced Vidalia Onions. Brown over medium high heat, stirring often for about 20 minutes until carmelized.
- Add the sliced shallots and minced garlic, turning the temperature down to medium. Soften for 3 – 4 minutes.
- Remove the onion mixture from the pan and allow to cool.
- Mix the Greek Yoghurt and mayonnaise until incorporated and refrigerate to keep cool.
- When onions are completely cool, chop and fold into the yoghurt mixture.
- Season with S & P to taste.
NOTES
The onion mixture is very sweet; I salted liberally! But be cautious if your chips are uber salty… Between the two, you don’t want to go overboard!
